But now I'm back and beyond motivated to share more delicious, nutritious and beautiful plant creations with you. Love & plants, Karo ____ DRINK: Strawberry Kombucha with Lemon Balm 150-200ml Strawberry Kombucha 2-3 Ice cubes or Rose Ice Cube Optional (Gin) Handful Frozen Gooseberries Topping: Lemon slice, Lemon Balm Base recipe I used to make my Kombucha*: https://www.fairment.de/wissen/kombuc... A delicious “supermarket Kombucha”*: https://shop.fairment.de/collections/... In the second fermentation stage I used 5-6 large strawberries & ginger as an infuser. *unpaid advertisment ____ STARTER: Leek Pappardelle with Lemon-Cashew Salsa Leek Pappardelle 2 leeks (white part) Juice from 1/4 lemon + zest for garnish Salt /pepper 3-4 Tbsp olive oil Add 2 cloves of garlic to the mix Bake in aluminium foil for 45 mi nat 180°C in preheated oven Cashew cream (you will only need a little part of this sauce and can save the remaining amount for another recipe) 130g cashews (soaked weights +200ml water) 1 onion roasted with water 2 cloves of garlic (from roast above) Salt & pepper Topping: Lemon Zest + Roasted Heart cracker (Cracker + oil roasted in pan) ____ MAIN COURSE: Creamy Vegan Parmesan Polenta Parmesan Polenta 150g polenta 800-1000ml Oat milk (or a mix of oat & soy milk), add additional milk if necessary 30g vegan parmesan Spices: 1/2 Tsp porcini powder, ground dried garlic, Dash of Macis flower, salt & pepper 1 Tbsp olive oil Bring the milk to heat alongside with the spices. Then fold in the polenta and stir thoroughly while bringing it to heat. Remove the polenta from the heat completely and let it soak for roughly 10 min. Oven-Roasted Veggies Oil to bake + pepper + salt 2 spring onions (30min at 180°C) Pumpkin (depending on size; approx. 45 min at 180°C) Tomatoes (approx. 25 min at 180°C) The veggies, depending on their size vary in their baking time. Please see times above. Feel free to use the grill function at the end for a few minutes for an extra smoky flavour. Garlic-Tomato Sauce 4 cloves of garlic 400g tomatoes (1 can tomatoes without additives) 150-200ml Red Wine 1-2 Tbsp Veggie stock (depending on saltyness of stock) Spices: Salt, Pepper, Italian herb mix Reduce according to taste. The longer you cook your tomatoes, the more intense its flavour. Topping: Thyme ____ DESSERT: Creamy Avocado-Chocolate Mousse with Salted Macadamia-Caramel Vegan Avocado Mousse 2,5 avos (ripe) 3 Medjool Dates 160g Coconut Milk (90g solid part) 1 Organic Orange (juice) 25g Cacao Powder 170g Chocolate 30g Maple Syrup 30g Cashews (weight after soaking) 6 Lemon Balm leaves 45ml Oat Milk Salted Macadamia-Caramel 100g brown sugar 100g salted macadamias Heat sugar slowly on medium heat. This may take quite a bit. Be patient and dont touch until the edges are melted.
