I created Instant Pot Green Beans and Sausage to be delicious and uncomplicated. The bell peppers shine through and give this dish a nice flavor. Saucy but not soupy. Suitable for a one pot meal. Just add a side of crusty garlic bread. Instant Pot Green Beans and Sausage Ingredients: 1 pound of ground sausage. I like the sweet Italian variety. 1 1/2 pounds of fresh green beans, ends cut off, rinsed 1-2 Tbs Olive Oil 1 Sweet or Yellow Onion, chopped or sliced in rings (not too thick). 1 Red Bell Pepper, sliced in strips 1 Yellow or Orange Bell Pepper, sliced in strips. 1 28 oz can of crushed tomatoes 1/4 to 1/2 can of water or broth (use the crushed tomatoes can). 1 clove garlic, crushed 1 tsp. dried basil 1/2 tsp. salt 1/2 tsp coarse ground pepper Pinch or 2 of red pepper flakes (if using mild sausage). Directions: Set IP to Saute mode. When the display reads Hot, add olive oil and swirl in pot. Add onions and stir. Cook just a few minutes, until they just start to soften. Add sausage and stir, breaking up the meat. Cook for a few minutes, stirring to continue breaking up the meat. Stir in garlic, salt, pepper, basil, red pepper flakes (if using). Stir in tomatoes and water, and stir. Add peppers and green beans, stir. Put the lid on your Instant Pot, set knob to sealing. Cancel the Sauté mode. Set to Manual for 4 mins. Cook for 5 minutes if you like softer beans. When cooking time ends, and it beeps do a Quick Pressure Release, and when the pin drops open the lid. Stir well and serve. Add a side of crusty bread for a complete meal!
