Living in a long-distance relationship, I’ve realized that both the mornings we share and the quiet solo mornings that follow are filled with simple rituals that keep you grounded and inspired. These early mornings start the evening before. I like to meal prep, do a quick load of laundry, and organize the kitchen so the next day feels smooth and stress-free. These small habits make our 5AM mornings much calmer. We have breakfast, chat a little, and enjoy those small moments before he heads out. Once he’s gone, I settle into my solo routine, feeding the dogs, resetting the kitchen, and moving through a slow, simple flow that helps me ease into my day. Preheat oven to 325°F (165°C). 2. Mix all dry ingredients in a large bowl. 3. Add the wet ingredients to the dry and mix until evenly coated. 4. Spread mixture on a baking sheet. 5. Bake for 20-25 minutes. 6. Let cool completely before storing in a container. 7. Granola will stay fresh for up to 2 weeks. BIRCHER MUESLI Ingredients: • 70 g (¾ cup) rolled oats • 30 g (2 tbsp) raisins or dried cherries • 100 ml (½ cup) milk • 120 g (½ cup) Greek yogurt • 30 ml (2 tbsp) lemon juice • 2 medium apples • 300 - 400 g (2 to 2 ½ cups) of fresh fruit (e.g. berries, grapes, apricots) • Optional: flower sprinkles • Optional: 30 g (¼ cup) chopped nuts or granola (to taste) • Optional: sugar, honey, or maple syrup (to taste) Instructions: 1. Place oats and raisins/dried cherries in a large bowl. 2. Pour in the milk and mix well. Let it soak for about 1 hour, until the oats are soft. 3. Cut the apples in half, remove the cores, and grate them directly into the bowl. Mix the grated apples thoroughly into the mixture. 4. Stir lemon juice. 5. Chop the fresh fruit into small pieces and add to the muesli. 6. If the mixture is too thick, add a little extra milk to loosen it up. Sweeten to taste with 1–2 tablespoons of sugar, honey, or maple syrup. 7. Optional (but delicious): Just before serving, fold in 100 ml (½ cup) of whipped cream for a richer, creamier texture. COUSCOUS SALAD Ingredients: • 150g (1 cup) couscous • 400 ml (1⅔ cups) vegetable broth (hot) • ½ cucumber, diced • 3 green onions, finely sliced • 250 g (1½ cups) cherry tomatoes, halved opr quartered • Fresh mint, chopped (to taste) • 80 ml (⅓ cup) olive oil • 5 tbsp red or white wine vinegar • 2 tbsp lemon juice • 1 tbsp tomato paste • 1 tbsp agave syrup or maple syrup, to taste • 1 tsp paprika powder • 1 tsp ground cumin • Salt & pepper (to taste) Instructions: 1. Add the couscous to a large bowl. 2. Pour hot vegetable broth over it. 3. Cover the bowl and let it sit for 10–15 minutes. 4. Dice cucumber into small cubes. 5. Cut cherry tomatoes in halves or quarters, depending on their size. 6. Slice green onions into rings. 7. Finely chop the mint. 8. In a small bowl, combine all the ingredients for the dressing and mix well. 9. Toss everything together until well combined. 10.
