This week I am here with yet another famous Goan delicacy; the tisreo pulao or clam pulao. A fairly simple rice dish packed full of flavor and beautiful aroma. Before we get into the ingredients do read about the cleaning procedure of clams below and also about the rice and water ratio. Once you have got these things right the rest is easy peezy! Prior to cooking these clams, they need to be opened and cleaned as they contain sand and salt from the sea. There are two common ways of cleaning clams. The first is soaking them in a bowl of water containing 2 tsp salt. The clams breathe in the water and flush the sand out of them. Use a small paring/turning knife and slide through to slit the clams in the center. Pry open to have two shells separated (one with and one without the flesh). Discard the shells and continue this process until you are left with only clam meat. And the second method is the one I have used in this video. Prior to boiling the clams were washed in running water to get rid of all the unwanted sand. They were given a slight boil using very little water just so they open up a bit. You may follow the same procedure to open them as in the first. The liquid left behind after boiling may be saved for later use to make up the curry as it is full of flavor. However, make sure you strain the liquid well to avoid the sand that the clams threw up. Important Tip: Any closed clams that didn't open in the process have to be discarded. Do not use those in the cooking. Once this step is complete the rest is a breeze! Another important note to remember while preparing pulao is the Rice to Water Ratio. The ratio is always 1:2, i.e, If you use 1 cup of rice you have to use 2 cups of water. In this case, you will make up the volume of water using clam reserved liquid and regular water. INGREDIENTS - IN ORDER OF USE Tisreo/ Clams - 1 kg Pure ghee - 3 tbsp Bay leaf - 1 no Peppercorns - 1tsp Cloves - 1/2 tsp Cardamom - 3 nos Cinnamon stick - 2 inch Onions - 3 medium, finely chopped Tomato - 1 fat finely chopped Turmeric powder - 1/4th tsp Rice - 1.5 cups Water - 1 cup Clam reserved liquid - 2 cups Bouillon Cubes - 3 nos Salt - To Taste Green Chilli - 1 nos Do check out some of my other recipes too!
