Fruit Tart From Scratch Recipe @ http://www.DishinWithDi.com This is my easy fruit tart recipe with filling. I use a simple shortbread crust recipe for this, which is easier than a shortcrust pasty recipe (pate brisee), because this is a press-in crust and is just simple to make and quite good. This fruit tart filling is made with cream cheese, heavy cream, sugar and vanilla and is a quick and easy fruit tart filling recipe to make, rather than my sweet pastry cream tart recipe. Pastry cream, which goes quite well with this and is delicious, does require cooking, so it's not quite as easy as this cream cheese filling. Recipe video link for the pastry cream is below, if you have the time, it's well worth making for tarts. To make this fruit tart from scratch, you first need to make the shortbread crust. Video recipe shortbread cookie crust link is below. It takes no time at all and it makes for the best fruit tart! Glaze, using apricot preserves is applied to the baked crust, to seal it, then the cream cheese filling is prepared and chilled. Then to slicing the fruit. I use fresh fruit for tarts, as I feel frozen fruit can release too much water. I use kiwi (how to peel a kiwi video below) , pineapple, mixed berries: blackberry, blueberry and strawberry. Fruit tart or fruit pie, as some call this, can be made with any fruit. I make a delicious peach tart, strawberry tart, apple tart and chocolate raspberry tart! I'll share that sometime and I'm tossing around and idea for a tart recipe with white chocolate as well! Yum! You can use whatever fruit is in season and make all kinds of designs. Fruit tart decoration can be fun and there are soo many fruit tart design ideas out there to choose from, you don't have to be artistic. Use my design, if you have the fruit or Google "fruit tart designs" and you'll find loads of ideas! Pile the fruit on and make an old fashioned fruit tart! I slice the fruit just before assembling the tart. Once the fruit is cut, I grab the cream filling from the fridge and spread that on the tart and then top the cream with my fruit, making a beautiful design. I've made this tart for holidays and it makes a gorgeous dessert centerpiece decoration! You can also take my crust recipe and make mini fruit tarts for parties. Small fruit tarts are easy to make, by simply topping with mixed berries. Fruit tarts are perfect for holidays, summer parties, served with lunch, brunch, and more! You don't have to be a pastry chef to make a fruit tart! This is the best traditional fruit tart I've tried. Although Wegmans fruit tart is pretty good, mine it better, at least that's what I'm told!
