Made with veggie mince, beans, tomatoes, and a yellow pepper, this chilli is hearty, budget-friendly, and ready in under 40 minutes. Perfect served with rice, tortilla chips, baked potatoes, or wraps! Ingredients 1 tbsp olive oil 1 onion, diced 2 cloves garlic, minced 1 yellow pepper, diced 1 carrot (optional) 500g veggie mince 1 tbsp tomato purée 1 tsp cumin 1 tsp smoked paprika 1 tsp ground coriander ½–1 tsp chilli powder 1 tsp dried oregano 1 can chopped tomatoes 1 can kidney beans 1 can black beans (optional) 1 vegetable stock cube + 150ml water Salt & pepper Optional: 1 square dark chocolate Method Cook onion in olive oil until soft. Add garlic, yellow pepper and carrot. Add veggie mince and cook until browned. Stir in tomato purée and spices. Add tomatoes, beans and stock. Simmer for 20–25 minutes until thick and rich. 💡 Tip: Add a square of dark chocolate at the end for extra depth of flavour!
