Here is a simple recipe for Mutton Biryani: Ingredients: 500 grams mutton 2 cups basmati rice 4 tablespoons oil or ghee 1 onion, chopped 1 tablespoon ginger-garlic paste 2-3 green chillies, slit 1 tablespoon red chilli powder 1/2 teaspoon turmeric powder 1 tablespoon coriander powder 1 teaspoon garam masala powder 1 cup curd Salt, to taste 3-4 cups water Few saffron strands (optional) 1 tablespoon milk (optional) Instructions: Wash and soak rice for at least 30 minutes. Heat oil/ghee in a pressure cooker or a deep-bottomed pan. Add chopped onions and fry until they turn golden brown. Add ginger-garlic paste and green chillies, and saute for a minute. Add mutton pieces and fry until they turn brown. Add red chilli powder, turmeric powder, coriander powder, garam masala powder, and salt. Mix well and fry for 2-3 minutes. Add curd and mix well. Cover the lid and cook for 5-6 minutes. Add 2 cups of water and bring it to a boil. Drain the water from the soaked rice and add it to the cooker/pan. Mix gently. Add 1-2 cups of water (depending on the quality of rice) and mix well. Adjust the salt, if required. Close the lid and cook on a low flame for 15-20 minutes or until the rice is cooked and the mutton is tender. If you are using saffron, soak a few strands in warm milk and pour it on the rice. Mix gently. Serve hot with raita and salad.
