Hello Everyone! There is nothing like a hearty bowl of chili. My family loves chili. This recipe is one of those old school chili recipes that makes a good family dinner or works well when you are entertaining a bunch of folks. Beef Stew Meat (Chuck Roast) 1 1/2 to 2 C. Chopped Yellow Onion 2 Cloves Garlic Minced 1- 4-inch Jalapeno Pepper Chopped (can also use a Serrano Chile for more heat) 1 1/2 t. Kosher Salt (or to taste) 1/4 t. Black Pepper (or to taste) 3/4 C. Flour 3-4 T. Oil to sear meat 1- 7 oz Can Tomato Paste 1 C. Water 2- 14.5 oz Can Diced Tomatoes 1- 14.5 oz Can Petite Diced Tomatoes 2- 15 oz Can Pinto or Kidney Beans 2 T. Chili Powder 1-2 t. Ground Cumin Simmer Chili 1 1/2 to 2 hours until meat is nice and tender. Jiffy Corn Muffins ~Follow box directions. My Pro Tips: -Use room temperature egg. -Use milk that is NOT ice cold from the fridge (I microwave mine for a few seconds to knock the chill off). -Make sure you are baking your muffins in a preheated oven. Nice hot oven will give a good rise to your muffins. -Spray or butter your muffin tins well. -Use a 1/4 C. measure to scoop your batter into the tins, topping each muffin with a dollop of batter to give a nice crown peak to your muffins. -I like to check on my muffins at about 12 minutes to see how they are baking up.
