Hello, and welcome back to Farmers Wife Homestead today we cook two whole chickens and make dinner for the whole week. Great ideas for budget shopping and recession meal planning. The chickens cost thirsty dollars NZ We made Four roast chook meals Six sweet and sour Seven Chicken Pot Pie Five Pumpkin Soup Six Nachos Eight Chicken Subs We also had two cups of stock and could have stretched our meals further with another soup or leftovers as every meal has probably way more than what I have said above. Here is the Sweet and Sour Sauce Recipe. Heat 2 Tbsp. of oil and add 2 - 3 onions into quarter chunks 3 - 4 Carrots cut on the diagonal 3 - 4 cloves of garlic Heat until partially cooked add a pinch of salt to help sweat the onions Add 1 large Tin of pineapple chunks in juice 1/4 c white vinegar 1/4 brown sugar 1/2 - 1 Cup of chicken stock 2 heaped Tbsp. of Tomato sauce or paste 2 Tbsp. of Soy Sauce Add chicken Make sure the chicken is heated through. Combine 2 Tbsp. of Corn flour with 2 Tbsp. of cold water Add to the above ingredients once it's all heated through and cooked. Salt and Pepper to taste Serve over Rice Use up any other veggies you may have. If you would like to send me mail, here is my PO Box. Please address it too.
