Millet Junnu is a nutritious, plant-based alternative to traditional junnu and captures the essence of its comforting flavors. Perfect as a dessert or snack, it’s a delightful way to celebrate tradition with a modern, healthy twist! Ingredients: 1 cup bajra (pearl millet), soaked for 12 hours ½ large fresh coconut 5 cups water 2 cups jaggery (adjust to taste) 2 green cardamoms, crushed 1–2 tsp coconut oil (for greasing) Pistachios, chopped (optional, for garnish) Steps: 1️⃣ Blend the soaked bajra, coconut, and water until smooth. 2️⃣ Strain the mixture through a fine mesh strainer or cheesecloth to extract the milk. 3️⃣ Pour the extracted milk into a heavy-bottomed pot. Heat the extracted milk on low flame, stirring continuously for 20 minutes 4️⃣ Gradually add the jaggery, stirring well to dissolve. Avoid adding jaggery at the beginning as it may slow down the cooking process. 5️⃣ Cook on low flame for about 1 hour until the mixture thickens to a pudding-like consistency. 6️⃣ Once the mixture is smooth and thick, add the crushed cardamoms. Stir to combine. 7️⃣ Grease a tray with coconut oil, pour the mixture, and let it cool. 8️⃣ Refrigerate for 2–4 hours or overnight until set. 9️⃣ Cut into pieces, garnish with pistachios (optional), and serve chilled or at room temperature! Pro Tip: You can also use ragi or rice milk, but bajra adds a unique flavor and nutritional edge! Storage: Keep refrigerated for up to 1 week.
