Pulque, considered by the Aztec to be the nectar of the gods, is an alcoholic beverage made from the sap of the maguey plant. Native to the Basin of Mexico, pulque is a cultural staple among the people of the Teotihuacán Valley. Fast facts: Though the ABV is only about 1-3%, the drink will continue to ferment in your gut after consumption, creating a strange (yet familiar) buzz. The sap that is fermented to create the pulque is called agua miel (honey water). It is extracted from the maguey using an acocote, a tool traditionally made out of a gourd to siphon out the sap. Today, many farmers have modernized this tool by using fiberglass or even a plastic Coca Cola bottle! It is a think, fluid that is so viscous it can sometimes leave strings from your mouth to the vessel. Though its popularity has decreased over the last few decades, it is making a hipster-backed comeback in Mexico City through odd means such as canning after production.
