Kolhapuri Egg Curry Ghar main kaise banaya | तीखा कोल्हापुरी अंडा करी| Street style spicy Anda Curry KOLHAPURI EGG CURRY Preparation time 10 minutes Cooking time 30-35 minutes Serve 2-4 Ingredients For Kolhapuri Masala 3 tbsp Coriander seeds, धनिया की बीज 1½ tbsp Cumin seeds, जीरा ½ tbsp Mustard seeds, सरसों 3/4 tbsp White sesame seeds, सफेद तिल 1 tsp Carom seeds, अजवाइन 1 tsp Poppy seeds, खसखस Salt to taste, नमक स्वादअनुसार 3 Bay leaf, तेजपत्ता 5 - 7 no. Dry red chillies, सूखी लाल मिर्च 2-3 tbsp Oil, तेल 5-10Green cardamom, हरी इलायची 2 Vati Dry coconut, sliced, सूखा नारियल 5-10 Black peppercorns, काली मिर्च के दाने 3 no. Star anise, चक्र फूल 1½ inch Cinnamon stick, दालचीनी 5-6 no. Black cardamom, बड़ी इलायची 3-4 Cloves, लौंग 1½ Mace, जावित्री 1½ tsp Turmeric powder, हल्दी पाउडर 50-60 gram Degi red chili powder, देगी लाल मिर्च पाउडर For Boiling Eggs Water as required, पानी Salt to taste, नमक स्वादअनुसार 7-8 no. Eggs, अंडे For Ginger Garlic Paste 1 inch Ginger, peeled, sliced, अदरक 4-5 Garlic cloves, peeled, लहसु For Kolhapuri Egg Curry Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट Oil, तेल - 200gm 3 medium Onion, chopped, प्याज Water as required, पानी Salt to taste, नमक स्वादअनुसार Boiled Eggs, उबले हुए अंडे 1 tbsp Coriander leaves, chopped, धनिया पत्ता Other Ingredients For Garnish Coriander sprig, धनिया पत्ता Process For Kolhapuri Masala In a pan, add coriander seeds, cumin seeds, white sesame seeds, seeds, mustard carom seeds, poppy seeds, salt to taste, stone flower, bay leaf and dry roast it for a minute. Transfer it to a bowl. In the same pan, add dry red chillies, roast it and transfer it to the same bowl. In the same pan, add oil, once its hot, add dry coconut, green cardamom, black peppercorns, star anise, cinnamon stick, nutmeg, black cardamom, dry fenugreek leaves, cloves, mace, trifal and roast it until the coconut is golden brown in color. Drain out the oil with the help of a strainer and transfer it to the same bowl. Add asafoetida, turmeric powder, degi red chili powder and transfer it to a grinder jar. Grind it into a fine powder and keep it aside for further use. For Boiling Eggs In a pot, add water, vinegar, salt to taste and bring it to a boil. Gently with the help of a spoon, place the eggs in the boiling water and hard boil them for 12 minutes or cook according to your preference. Transfer it to an ice chilled water, crack the egg and keep in the water. Remove the shell and keep it aside for further use. For Ginger Garlic Paste In a mortar pestle, add ginger, garlic and grind it into a rough paste. Keep aside for further use. For Kolhapuri Egg Curry In a pan, add fried coconut oil, once it's hot, add ginger garlic paste, onion and saute until translucent. Add Kolhapuri masala and saute for a minute on slow flame. Add water, salt to taste and cook it well for a while. Add boiled yolk, boiled whole egg and simmer it for a while until the gravy is thick. Finish it with coriander leaves and lemon juice. Serve hot with bhakri. with coriander sprig, lemon weyes. Transfer it to a serving dish and garnish it
