Hello, today I am sharing my vegan carrot cake recipe this is GF as I don't tolerate Gluten very well. If you are celiac please ensure your baking powders are also GF too. You can make this with regular flour too. I thought this would be good for anyone looking for an alternative desert as not everyone likes Christmas cake or pudding. We ate some of this with custard but it is great without and it serves 10 people good size portions or 12 slices. Recipe 250g of flour (I used a mix of gram flour, buckwheat flour and GF Plain flour) 100g grated carrot 1 banana mashed 150g sugar (white or brown, brown is better but go with what you have) 85g sultanas 85g walnuts (broken or crushed) 225ml plant milk (I used soya) 100ml oil (I used Rapessed) 1 lemon juiced 2 tsp baking powder 1 tsp bicarb Watch the video for full instructions, bake at 180c for 45 mins.
