Sinangag, or Filipino garlic fried rice, is a beloved breakfast staple in the Philippines, known for its deliciously simple yet aromatic flavor. Made with cooked long-grain rice, crispy golden garlic, green onions and seasoned with the perfect balance of salt and soy sauce, this dish is both savory and satisfying. Typically paired with fried egg, sausage, beef tapa, or longganisa. Sinangag can also be enjoyed on its own. Whether it's a morning meal or a quick snack, this flavorful fried rice is a must-try in Filipino cuisine. Ingredients: 3 cups of cooked long-grain rice (preferably cold, day-old rice works best) 1 strand green onions 3-4 cloves of garlic, chopped 3 tablespoons olive oil 1/2 teaspoon salt (adjust to taste) 1/2 teaspoon soy sauce Instructions: Prepare the Rice: *If using freshly cooked rice, let it cool for a bit. Cold, day-old rice is ideal because it’s less sticky and fries up better. Cook the Garlic: *Heat the olive oil in a large skillet or wok over medium heat. *Once the oil is hot, add the chopped garlic and sauté for a few seconds or until it becomes golden brown and fragrant. Be careful not to burn the garlic. Fry the Rice: Add the cooked rice to the skillet with the garlic. Use a spatula to break apart any clumps of rice and ensure it mixes well with the garlic and oil. Stir-fry the rice for about 5-7 minutes, until it’s heated through and slightly crispy on the edges. Season the Rice: Add salt and soy sauce to taste. Then, add sliced green onions. Stir well to combine the seasonings evenly and cook just a minute. Serve: Transfer the rice to a serving plate and serve hot. You can top it with a fried egg or your favorite breakfast proteins like sausage, beef tapa, or longganisa. Notes: *Make sure to use cold rice for the best texture.
