Hyderabadi Chicken Dum Biryani Add 3-4 tablespoons of oil to a pan and let it heat Add some dried bay leaves Add some cumin seeds and once its brown Add lots of finely chopped onion Once the onion is brown add the chicken and mix it all in Add salt and mix the salt in Cover and let it cook for 5-7 mins 10 mins later remove the cover Mix the chicken Add Turmeric powder.Then add Red Chilli powder Add 2 tablespoons of ginger and garlic paste and mix it all in. Cover the pan with a lid and let it cook on a slow flame till the excess water has been absorbed. 5 mins later, remove the lid. The water has been absorbed. Add 2 tablespoons Biryani Masala. Cover with a lid and let the chicken cook for 5 mins. Soak Basmati Rice for half an hour. Take a small cloth bad and add it to the soaked rice. In the cloth bag, add 4 green cardamoms, 5 cloves, 1-2 star anise and cinnamon. Par-boil the rice. Don't cook it completely. 5 mins later, remove the lid and toss the chicken around. Now add one cup smooth yoghurt and mix it all in. Cover with a lid and let the chicken cook for 5 mins. 5 mins later, remove the lid. The chicken is now cooked completely. Take some out in a bowl. Now add some of the par-boiled rice on top of the leftover chicken in the pan. Add some fried onions, fresh coriander leaves and fresh mint leaves. Add some chicken, alternate with some par-boil rice and then add the fried onions, fresh coriander and fresh mint. Continue till the chicken and rice have all been added. In the end, add the onions, fresh coriander and mint Add 2 tablespoons of ghee on top. Stick dough to the sides of the frying pan lid. Cover the pan with the lid. This will prevent the delicious scents from escaping. Cover with the lid and press it in. 5-10 mins, remove the lid and the dough attached to the sides.
