Divide into two equal pieces and form into sausage shapes. Wrap the dough in cling film and refrigerate until the dough is firm. Use a sharp thin knife to cut the cookies into 1cm thick slices. Bake on parchment lined baking trays at 180C/350F (160C/320C Fan) for about 20 minutes or until lightly browned around the edges. Allow to cool fully before eating.
