3 Healthy Suhoor Recipes Apple Cinnamon Oatmeal Ingredients Coconut oil (a little bit) Diced small apple (not Granny Smith apples) Maple syrup or honey Milk of choice (I used unsweetened vanilla almond milk) Oats Chia seeds, hemp seeds, or flax seeds A pinch of salt Creamy peanut butter (optional) Apple Cinnamon Oatmeal Method 1. Heat a pan on medium 2. Add coconut oil, apples, & cinnamon 3. Cook for 3-4 minutes (keep mixing so it doesn’t burn) 4. Once apples are cooked through set aside 5. Heat a sauce pan on medium-high & pour in milk (watch pan carefully so milk doesn’t spill over) 6. Once milk comes to a gentle simmer add in oatmeal, healthy seeds of choice, & pinch of salt 7. Mix well 8. Cook for 2-3 minutes 9. Pour oatmeal into bowl 10. Top with apple cinnamon mixture & drizzle of peanut butter on top 11. Enjoy! Blueberry Muffins Ingredients Wet Ingredients 2 Beaten eggs 1/3 Cup maple syrup 1 tsp Vanilla 1 tsp Lemon juice 1 Tbsp melted coconut oil or melted butter 1/2 Cup milk of choice (I used unsweetened almond milk) Dry Ingredients 1/2 + 1/4 tsp Baking soda 1/4 salt 2 Cups oat flour or all-purpose flour 1 Cup fresh or frozen blueberries Blueberry Muffins Method 1. Pre-heat oven to 350F 2. In a bowl combine all the wet ingredients (make sure melted butter or coconut oil is cooled down before using) 3. Next add in the dry ingredients except the blueberries 4. Mix till well combined 5. Finally add in the blueberries & mix 6. Line muffin tin with cupcake liners 7. Using a 1/4 measuring cup pour batter into cupcake liners (it will make 11 muffins) 8. Bake for 18-19 minutes Veggie Hashi & Fried Eggs Ingredients Eggs Black pepper Salt Potato Red pepper (chopped small) Yellow pepper (chopped small) Red onion (chopped small) Chili powder Garlic powder Red chili flakes (optional) Shredded cheese of choice (optional) Cilantro Veggie Hashi & Fried Eggs Method 1. Heat a pan on medium 2. Then add oil 3. Crack in eggs (don’t mix) 4. Season only top side with salt & pepper 5. Flip & cook till desired doneness then set aside 6. Wash & peel potato 7. Using a cheese grater grate potato 8. Heat a pan on medium 9. Add oil, shredded potato, peppers, & onion 10. Season with salt, black pepper, chili powder, garlic powder, & chili flakes 11. Cook for 4-5 minutes on medium-low 12. Top with cheese & let it melt 13. Top it with fried eggs & cilantro 14.
