Unlike the more common pea (matar) nimona, using green chickpeas gives it a deeper, earthier flavor and a slightly nutty texture. Here is a simple, authentic way to make it: ✅Ingredients Main: 2 cup Fresh Green Chickpeas (Hare Chane) Veggies: 2 Medium Potatoes (cubed), 1 Tomato (chopped) The "Green Paste": 1 cup Fresh Coriander, 3-4 Green Chillies, 1-inch Ginger, Spices: 1/2 tsp Turmeric, 1 tsp Coriander powder, 1/2 tsp Garam Masala, a pinch of Hing (Asafoetida). Cooking Oil: 3 tbsp Mustard Oil (traditional) or any vegetable oil. ✅Cooking Steps Prep the Chana: Take 1.5 cups of the green chickpeas and grind them into a coarse paste (don’t add much water). Keep the remaining 0.5 cup of whole chickpeas aside for texture. Make the Aromatics: Grind the coriander, green chillies, ginger, and garlic into a smooth green paste. Fry the Potatoes: Heat oil in a kadhai. Fry the potato cubes until golden brown. Remove and set aside. Sauté the Chana: In the same oil, add the coarse chana paste. Sauté on medium flame for 5-7 minutes until the raw smell disappears and the paste starts to look "grainy" and slightly darker. This is the most important step for flavor! Remove and set aside. The Base: Add a little more oil if needed. Add Hing and Cumin seeds. Pour in the "Green Paste" you made earlier and saute for 2 minutes. Add turmeric and coriander powder. Simmer: Add the tomatoes and cook until soft. Now, add the fried potatoes, the sauteed chana paste, and the whole chickpeas. Water & Salt: Add 2-3 cups of warm water (Nimona should have a pouring consistency, not too thick). Add salt. Cover and cook for 10-12 minutes on low flame. Finish: Sprinkle garam masala and a dollop of Ghee on top before serving. Pro-Tips for the Best Nimona The Mash: Don't turn the chickpeas into a smooth puree. The coarse texture is what makes a Nimona authentic.
