Mix to combine 125g rice flour, 15g corn starch and 200ml coconut milk. Put aside. 2. Peel the purple sweet potatoes, cut into small cubes of about 210g and cook them in a non-stick pan with 600ml water added. 3. Cover and bring them to a boil over high heat. 4. Cover and cook for 5 minutes over low heat. 5. Then turn off the heat, add in 60g brown sugar and stir until completely dissolved. 6. Leave cool, pour the mixture from 1 into the purple sweet potato soup. 7. Cook over low heat and stir until the mixture thicken. 8. Pour them into the oil coating mould (6x8 inches) and smooth out the tops. 9. Steam for 30 minutes over medium heat in pre-heated steamer. 10. Let it cool completely and keep it in the fridge to chill. 11. Remove it from the mould and cut into desired shapes by using a plastic knife. 12. Serve it cold.
