Hainanese rice is a typical Chinese dish but is also popular in Malaysia and Singapore. The combination of soft rice with a fragrant aroma, as well as chicken, gravy, chili sauce, and other side dishes make this dish special. Hainanese Chicken Rice Recipe (serves 3-4) Hainanese rice: 2 cups rice, washed and soaked for 30 minutes 2 cups chicken stock 1 tbsp Lee Kum Kee sesame oil 1 tbsp Lee Kum Kee oyster sauce 2 tbsp Lee Kum Kee soy sauce 2 tsp salt ½ tbsp sugar ½ tsp pepper Garlic oil: 75 ml oil 12 cloves garlic, finely chopped 2 pieces of ginger, grated Hainanese chicken: 1 pair of chicken breast fillets with skin ½ tbsp salt ½ tbsp sugar Scallion oil: 5 stalks spring onions, chopped 1 piece of ginger, grated 2 cloves garlic, finely chopped 40 ml cooking oil 1 tbsp sesame oil 1 tbsp oyster sauce ½ tsp salt 1 tsp sugar ½ tsp pepper Chicken stock: 500 gr chicken feet / bones 4 liters of water 3 cloves garlic with skin 1 piece of ginger, crushed 150 gr white cabbage 2 stalks of white spring onions, cut Sugar, salt, pepper, seasoning Sambal: 8 curly red chilies 8 red cayenne peppers 6 cloves of garlic 1 tbsp sugar 1 tsp salt 2 tbsp vinegar 80 ml water Complements: Soy sauce chicken (link) Coriander leaves Curly red chilies, sliced Steps: 1. Brine the chicken by soaking the chicken breast fillet in water, salt, and sugar then let it sit for 2 hours or overnight in the refrigerator 2. For the broth, boil the water then boil the feet, bones, garlic, and ginger for ±30 minutes 3. For the garlic oil, heat the oil then add the ginger and garlic after it is half dry, reduce the heat then stir until golden brown, set aside 4. For the Hainanese rice, add the previously soaked rice, broth, ½ garlic oil, soy sauce, sesame oil, oyster sauce, salt, and pepper then stir and place the chicken breast fillet on top then sprinkle with sugar then cook with a rice cooker until done. Once cooked, remove the chicken so it is not overcooked, then stir the rice 5. For the scallion oil, in a bowl combine the spring onions, ginger, garlic, sesame oil, oyster sauce, sugar, salt, and pepper then pour over the hot oil and stir until evenly mixed 6. For the sauce, add the white part of the spring onions, cabbage, sugar, salt, flavoring, and pepper to taste to the chicken stock then cook until the cabbage wilts and the sauce turns white 7. For the chili sauce, blend the garlic, cayenne pepper, curly red chilies, and water until smooth then transfer to a pan and add vinegar, sugar, salt, and a little chicken stock then cook until the water is slightly reduced 8. Place the Hainanese rice on a plate then place the sliced chicken on top then pour over the garlic oil and scallion oil, add the coriander leaves and sliced chilies on top then serve with chili sauce, sauce, and soy sauce chicken as a complement 9.
