Preheat the oven to 350°F (180°C). Line a baking tray with parchment paper and set aside. 2. In a blender or food processor, combine cottage cheese, egg, maple syrup, and vanilla extract (if using). Blend until smooth. 3. Transfer the mixture to a bowl. Add almond flour and baking powder, then mix until a dough forms. 4. Fold in the chocolate chips (optional) or any other mix-ins of your choice. 5. Using an ice cream scoop, portion the dough onto the prepared baking tray. Slightly flatten each mound and top with extra chocolate chips (optional). 6. Bake for 15-16 minutes, or until lightly golden. 7. Allow the cookies to cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely. Notes: If you want less carbs in your cookies, omit the chocolate chips and replace the maple syrup with stevia. If you use stevia instead of maple syrup, you might need less almond flour.
