Tempura is so popular of a dish here in Japan, despite it originally being a dish from Portugal. Sumida’s Michelin Star restaurant Hasegawa takes tempura to whole nother level, delivering high class service and beautifully made perfect tempura and arguably the best tempura in Japan. But what is Tempura? Basically, tempura is a type of fried food, usually fish or vegetables, that uses a special type of very light batter made from chilled water, flour, and eggs. The Michelin starred Hasegawa Tempura offers a set course meal, which includes an appetizer, the “omakase”, a main dish (which you can choose either a tendon which is tempura on rice or tencha which is a tempura with a soup made from tea and rice), then finally a dessert. The set course menu varies depending on the season as well as day to day. The omakase, which is basically the main event when it comes to this tempura adventure, is a part of Japanese dining tradition that is very different to anything the West is used to. You leave your entire meal up to the chef. Everything is carefully selected to make the best meal you could ever imagine and that is why I loved this Michelin Star restaurant experience. If you are in Tokyo or Japan, I have to recommend that you get yourself to Hasegawa tempura so you can experience this incredible culinary journey for yourself! HASEGAWA COURSE MENU Appetiser - Soumen bowl, this was a starting base for the tempura. This dish is a mix of fresh vegetables and Soumen which is basically a very thin form of udon noodles. This part of the meal starts with this easy base to prepare you for the Tempura which is high is in oil. Omakase - omakase is the idea of allowing your chef decide your entire meal. The reason for this is because the chef knows how the ingredients flow together. The tempura omakase tempura I received in this video are: Shrimp toast Shrimp Qual's egg Onion wild vegetables Lotus root sweetfish Mackerel white asparagus Main dish - the tendon, much like with sushi omakase restaurants where they give you a hand roll to finish off your meal the tendon is a perfect topping to the tempura. It is just heavy enough to fill you up and just light enough to give you enough room for the dessert. Paired with simple pickled vegetables to perfectly cut through the oil based meal you have just received. The Dessert - a truly traditional end to your tempura adventure. A mix of honey and adzuki bean paste with shiratama dango placed inside. A fantastic blend of sweet and savory that took my breath away.
