Parsi Akuri Recipe: Eggs - 4 nos Oil - 2 tbsp Onion (finely chopped) - 1 Cup Garlic (finely chopped) - 1 tbsp Green Chilli (finely chopped) - 1 tbsp Tomato (finely chopped) - ¾ Cup Coriander Leaves (finely chopped) - 3 tbsp Turmeric Powder - ¼ tsp Red Chilli Powder - ½ tsp Sambar Powder - 1 tsp Salt - ½ tsp Butter (cold) - 1 tbsp Cooking Instructions: 1. Heat oil in a pan and add the onions, garlic, and green chilli. Saute until it turns translucent. 2. Add the tomatoes and all the powdered spices and salt. Cook for 3 minutes. Add the coriander leaves and stir. 3. Add the eggs on low heat. Stir continuously until it starts to thicken. Before it turns completely solid and while it is still runny, turn off the heat and add cold butter. Keep mixing it until the butter melts and turns creamy. 4. Serve along with toast with butter/ghee or with chapathis. Cooking Tips: 1. Parsi sambar masala is traditionally used. We have substituted it with regular Sambar powder. You can also use Garam masala instead. 2. The eggs should still be a bit runny. Remove it from the pan immediately after cooking so that it does not overcook.
