It's a staple in many North Indian restaurants and is often served as a main course or side dish. The combination of fenugreek leaves, peas, and cream creates a unique taste that's both refreshing and satisfying. Ingredients with approx measurements Fresh peas - 1 cup Methi leaves - 1 cup Onion - 3 Tomato - 1 Cinnamon Bay Leaves Cloves Black Pepper Oil Ghee Cumin seed Salt Garam masala Ginger Green chili Fresh cream Sugar Coriander leaves Kasuri methi Method: I have added 1 cup of fresh green peas in a vessel with required amount of water and let it cook. This peas has been cooked in high flame for 4 minutes If you press this peas with a finger, it will be pressed well If so, it means it has been cooked well. At this time, switch off the flame In a bowl i have cold water, transfer the cooked peas into that. We can transfer this into it Why we are transferring this into water? It helps to retain the green colour. In a pan, add 1 tbsp of oil and once the oil is hot, add 1 small piece of cinnamon, 1 bay leavs, 1 clove, 10 black pepper and fry it well. Once it is fried, add 1 small piece of ginger and 2 green chillies and fry it well. After frying this, add 3 chopped onions. Saute it well. Once the onion is cooked well, I added 1 tomato. The tomato should cook soft. Saute it well. The tomato is sauted well. I have soaked 10 cashews in water. Add the soaked cashews and cook it for 5 mins on medium flame. After 5 minutes, turn off the flame and let it cool down. After it cools down, grind it into a fine paste. In a pan, add 2 tbsp of ghee and once the ghee is hot, add 1 tbsp of cumin seeds. Once the cumin seeds splutter, add the fenugreek leaves. I have added the chopped small fenugreek leaves today. If you have big fenugreek leaves, you can use them. Saute it well. Once it is sauted well, we can add the cooked peas. Mix it well and add the grinded paste. Mix it well and add the required salt & 1/2 tbsp of garam masala and mix it well. Close the lid and let it cook for 5 to 7 minutes. Cook it on medium flame. After 7 minutes, add 1⁄4 cup fresh cream and mix it well. Add 1⁄2 tsp sugar and cook it for 2 minutes on high flame. After 2 minutes, add fresh chopped coriander leaves and dried fenugreek leaves. Mix it well and turn off the flame. That's it. Super methi matar malai is ready.
