Use a spoon to scrape the fresh coconut meat and place it into the blender. Add water, maple syrup, and cinnamon stick and blend everything together for a minute. 3. Strain the mixture through a fine-mesh strainer into a bowl or large-mouthed pitcher. 4. Divide ice cubes among glasses and pour the horchata over the ices.
