Takikomi gohan is a wonderful, aromatic Japanese mixed rice dish made with seasonal ingredients. In this recipe we use two different types of mushrooms (enoki and shimeji) and chicken thighs as the main ingredients. But feel free to leave out the chicken for a vegetarian version.
