Grease a pie dish and, if using pastry, line it with pastry. 2. Mix the tapioca, lemon rind and milk, and simmer for 1¾ hours until thick. 3. Stir in the sugar, allow to cool, and remove the lemon peel. 4. Beat in the eggs, and turn the whole into your pie dish. 5. Bake at 200-220°C for 30 minutes. Serve hot or cold.
