Bucatini Pasta and Homemade Red Sauce Recipe 1 24 oz can, peeled whole tomatoes 2-3 garlic cloves 1 bunch of fresh basil Sea salt, to taste Olive oil Vegan parmesan ( optional) Bucatini pasta 1. Pour canned tomatoes and its juices into blender. Blend until smooth sauce 2. In a cold heavy bottomed pot add enough olive oil just to cover the base and add your garlic and basil. Then turn on medium heat. This will infuse your oil with garlic and basil. Remove the basil once it starts to brown. Don’t let the garlic burn 3.After removing basil,pour tomato sauce directly into pan. It should sizzle as it combines with the oil. This part is more about sautéeing the sauce almost. Continue to stir the sauce occasionally as the flavors come together. It can be as little as 20 minutes but you can also cover and let simmer on medium low for more intense flavor. 4. Add salt to taste, I usually do a couple of big pinches of sea salt. Be mindful if you use the vegan parmesan that will have additional salt. 5.While sauce simmering boil your bucatini according to package. I like to salt my water first before boiling. When you drain the pasta reserve at least one cup of pasta water to help bring the sauce together 6.Combine the cooked pasta, red sauce and a few tablespoons at a time of the pasta water in a sauce pan until the noodles are coated. 7. Garnish with basil and vegan parmesan. Enjoy.
