What's for Dinner? Schnitzle Rubens a Leftover Makeover

Greetings! I have been thinking about doing this recipe ever since I made the schnitzle last week! A ruben sandwich with schnitzle instead of corned beef! What a great idea. And boy was it! A nice change from the norm. I heated the left over schnitzle in a frying pan with just a whisper of olive oil to heat it through. Put that on some buttered rye bread, top with cheese and some kraut and some homemade thousand island dressing and you have a sandwich that is fit for the Earl himself! I made two different versions here, one more traditional with swiss cheese and sauerkraut and one with havarti cheese and the leftover sweet and sour cabbage. Both were delicious!
