Line two baking trays with baking paper. Cream the butter and sugars together in a large bowl until light and fluffy. Add the wet ingredients – beat in the vanilla extract and egg until well combined. Mix the dry ingredients – sift the flour, baking soda and spices into the bowl. Fold in gently until just combined. Stir through the chocolate chips so they’re evenly distributed. Shape the cookies – use a teaspoon to scoop small mounds of dough onto the trays, leaving space for spreading. Bake for 8–10 minutes, until the edges are golden but the centres are still slightly soft.
