Be careful not to overprocess over-process. Form the batter into balls, and then roll each into the shredded coconut (pressing to make sure it sticks onto the balls). Place in the machine, and pulse until it resembles the texture of rice. If you have a small food processor you may have to do this in batches to avoid over processing the cauliflower.
