ADOBONG MANOK! Ingredients: • 1/2 kg chicken, cut into serving pieces • Ginger, sliced or minced • 4 cloves garlic, minced • 1 medium onion, sliced • 1/3 cup soy sauce • 3–4 tbsp oyster sauce • 1/4 cup vinegar • 1 cup water • 2–3 bay leaves • 1 tsp whole peppercorns or 1/2 tsp ground black pepper • 2 potatoes, peeled and cut into cubes • 2 tbsp cooking oil • Sugar, salt, and additional pepper to taste Instructions: • Fry the potato cubes in oil until golden brown. Remove and set aside. • In a pan, heat 2 tablespoons of cooking oil over medium heat. • Sauté the ginger, garlic, and onion until fragrant. • Add the chicken pieces and sear until lightly browned on all sides. • Pour in the soy sauce, oyster sauce, and pepper. Stir to coat the chicken. • Add water and bay leaves, then bring to a simmer. • Pour in the vinegar. Do not stir immediately—allow it to simmer for 2–3 minutes to mellow the sharpness. • Cover partially and simmer for 25–30 minutes, uncovered, until the chicken is tender and the sauce thickens slightly. • Add the fried potatoes to the pan and stir gently to combine. • Taste and adjust seasoning with salt, pepper, or sugar as needed. • For a richer, thicker sauce, continue to simmer until the liquid reduces to your desired consistency.
