Ingredients Crust 13 Graham crackers ~ 1.5 cups 6 tablespoons (85 g) unsalted butter, melted Filling 2 lbs or 4 blocks (8oz each) cream cheese softened 1 cup (200 g) of light brown sugar ¼ cup (50 g) of granulated sugar 4 large eggs at room temperature ½ cup (120 g) sour cream, room temperature one 15 oz pumpkin puree can (Trader Joe’s) 1 tablespoon vanila bean paste 2 ½ teaspoons pumpkin spice (Trader Joe’s) ¼ teaspoon salt 2 tablespoons all-purpose flour Bake at 375 F for 15 minutes, then 350F for 60 to 70 minutes in a water bath.
