Bring the mixture to a boil over medium heat, then lower the heat and let it simmer gently for 30 minutes. If you plan to enjoy the jam within a week, simply pour it into jars and store it in the fridge. For longer storage, stir in ½ teaspoon lemon juice at the end of cooking. While still hot, pour into clean jars, seal tightly, and turn them upside down until fully cooled. This helps preserve the jam naturally and prevents mold. Sourdough Discard Pastry Dough • 400 g all-purpose flour or cake flour (used gradually) • 25 g sugar • 250 g butter • 5 g salt • 75 g water • 75 g sourdough starter (discard) Start by mixing 250 g of the flour with the sugar, butter, and salt until well combined. In a separate bowl, mix the water and sourdough starter, then add it to the flour mixture. Gradually add the remaining flour, spoon by spoon, until the dough no longer sticks to your hands but stays soft and buttery. Roll the dough out to 10 × 20 inches, wrap it, and let it rest in the fridge for 30–45 minutes. Preheat the oven to 200°C / 400°F. Roll the dough out again to 16 × 24 inches, cut into 12 pieces, shape as shown in the video, fill with strawberry jam, and seal the edges with a fork. Chill again for 30 minutes. Brush with an egg wash (1 egg yolk + 2 tablespoons milk) and bake for 18–25 minutes, until beautifully golden on both the top and bottom.
