Learn how to prune and harvest a lemon balm bush with me, and then we'll learn to tie lemon balm bundles for drying! I will explain the drying process as well as explain how to use both dried and fresh lemon balm in savory recipes, salads, teas, and tinctures. I talk about the medicinal uses and benefits of lemon balm which is a nervine herb that can treat anxiety, depression, and insomnia. Here is my simple recipe for a delicious and calming tea made with fresh lemon balm, ginger root, and honey: ginger + lemon balm tea recipe This mild herbal tea tastes citrusy and floral with a bit of zing from the ginger. 3 quarts of water 3 Tbsp fresh ginger root, peeled and thinly sliced 1 1/2 cups fresh lemon balm, roughly chopped several Tbsp honey, to taste Add the water and sliced ginger to a large pot, cover with a tightly fitting lid, and bring to a boil. Once boiling, reduce the heat to low and let simmer for 10 minutes. Next, remove from the heat and add the chopped lemon balm to the pot. Replace the lid and let steep for 10 minutes. Simply strain the solids from the liquid, add your desired amount of honey, and the tea is ready to enjoy.
