Potato Croquettes (Stuffed, Fried Mashed Potatoes) Our potato croquettes or, stuffed fried mashed potatoes in this case is made from 5 large russet potatoes. We placed our potatoes in a pot and boiled them until they were fork tender. The Russets are the best for these potatoes as they have high starch content and keep their structure together best. I prefer mashed potatoes with yellow yukon potatoes, but these are the best for croquettes or hash browns. For our mashed potatoes recipe Ingredients: 5 each - large russet potatoes 1/2 - stick butter 1/4 cup - cream or milk 1/4 cup - chopped green onions 1/4 cup - chopped parsley 1 each - egg, beaten As needed: salt peper garlic powder Method: Boil potatoes until fork tender. Drain potatoes and place in a mixing bowl. Add butter, cream, parsley, green onions, egg, salt, pepper and garlic powder and fold with a wooden spoon. Using an ice cream scoop or measuring cup, measure 1/4 cup of potato mixture. Place a 1/2” X 1/2” cub of cheese in the center. Drop into an egg, flour and breadcrumb dredge. Heat in 350 degree oil until golden brown. Place in a 325 degree oven to ensure cheese is melted and mashed potatoes are cooked. Remove from oven a plate.
