Cookbooks on Amazon: https://amzn.to/3Cx4xpE MASTER COOKBOOK RECIPE # 76 ROUND STEAK, FRIED Ingredients: round steaks 1 1/2 cups self-rising flour salt (omit if using a salty meat tenderizer) roasted garlic powder ground rosemary, optional black or white pepper 2 eggs, room temperature McCormick unseasoned meat tenderizer Instructions: Remove the meat from the fridge an hour before tenderizing to warm the fibers. Lightly season with tenderizer and generously with spices. Pound the steaks on both sides with a mallet, preferably a day ahead, and refrigerate in a Ziplock bag overnight. Before battering and frying, take the meat out an hour earlier. Place flour in a shallow pie plate; beat eggs in another. Dip the steaks in eggs, then coat them in flour, pressing the flour into the meat to ensure a thorough coating on both sides. Fry in 1/3-inch-deep hot oil for 3 minutes on one side, then flip and fry for 2 minutes, lowering the heat slightly. Remove steaks and place on a paper towel-lined plate. Pour out excess oil. (recipe below) MASTER COOKBOOK RECIPE # 613 WHITE MILK GRAVY Ingredients: 1/2 cup self-rising flour, in sifter 1/2 cup shortening or salted butter 1 tsp salt 1/2 tsp black pepper 3 cups milk Instructions: Start with a large skillet, at least 10 inches (larger if available). Melt shortening or butter over medium heat. Turn to medium-high. Sift flour quickly into the melted fat. Mix thoroughly with a wire whisk. Add salt and pepper. Let the flour brown to golden, then add milk; you will smell a great aroma as it browns. Stir constantly, scraping bottom and sides, to prevent lumps. Pour when it thickens; it will continue to thicken. If it is too thick, add a bit of milk and whisk until desired consistency.
