Today we are setting up our brand-new dry curing chamber from the sausage maker. Here's the basic instructions: 1. Clean and sanitize all the inside component of the chamber (be sure to not spray down the electrical plugs or fans) 2. Add the water tray at the bottom on fill with distilled water that's been mixed with baking soda (1 tablespoon of baking soda per quart or water) 3. Connect the chamber to the humidification system 4. Slide in the drip tray 5. Suction cup the UV light to the bottom of the drip tray 6. Attach the drip guard 7.
