Hi everyone! I hope you enjoy this video! This is a very realistic, fairly low maintenance, high protein vegan meal prep that is one of my go-to's. I made some seitan as the protein (one of my favorites for sure!), some sweet potatoes and quinoa as my complex carb options, and some Brussel sprouts and broccoli as my starchy vegetables! Then I made a very simple lemon garlic tahini dressing, and cut up some veggies for some well-rounded meals that you can mix and match throughout the week! This meal prep took me a little less than two hours, but I was also doing some other things around the house. All-in-all I think its super yummy, super nutritious, and super realistic to try and fit in to a busy schedule! I hope you try some of these recipes out and hope this inspires you to meal prep! (I mean... if that's what you're into! lol) However you mix and match, the meals are roughly less than 600 calories and over 45g of protein... which to me is a huge win!
