Persian Green Bean Stew Enjoy this very delicious, nutritious, and hearty traditional Iranian stew of green beans, meat, potatoes, and carrots. Ingredients 16 oz Green Beans (لوبیا سبز), sliced 18 oz Beef, stew meat (گوشت خورشتی گاو) or other lean tender cut 3/4 Red Onion (پیاز قرمز), large, diced 7 oz Carrots (هویج), sliced 14 oz Potatoes (سیب زمینی). Honey Gold or your choice of small potatoes. 1 cup Tomato juice (آب گوجه فرنگی). Homemade juice made from grated and sieved tomatoes. 2 tbsp Tomato Paste (رب گوجه فرنگی) 1 tbsp Butter (کره) 1/3 cup Grapeseed oil (روغن هسته انگور) or other high temperature cooking oil 2 cups Boiled Water (آب جوشیده). Add more as needed. 1 tsp Dried Lime, ground (گرد لیمو عمانی).
