Cooking Steps: For Bharwa Dum Aaloo, I am taking 6 medium-sized potatoes. I have peeled these potatoes. It's a scooper, I am making a cavity in the potatoes to fill stuffing. Make the hole deep and even. Make it slowly. Keep these potatoes in the water to avoid so that these will change color. I have done all the potatoes like the first one. For stuffing, I am taking 200 grams of Paneer, a bunch of chopped coriander leaves, 1 chopped green chili, 5-6 chopped cashew nuts, a tablespoon of pistachio, 7-8 raisins, and a tablespoon of chopped ginger. Grate paneer in a bowl, add chopped ginger, chili and rest of the nuts in the bowl. add salt as per taste, Mix well. Fill Paneer stuffing in potatoes. Fill all potatoes... Add a coat of cornflour in the cavity opening of potatoes. fry these stuffed potatoes at medium heat until semi-cooked. Add 2 tablespoons of oil in the same wok. These are 10-12 pcs of garlic cloves, A large-sized tomato, and onion which are roughly cut. Fry garlic until golden color. Add chopped onion and fry for 2-3 minutes at medium, add tomatoes and fry at low heat until tomatoes melt. Take this out on a plate and leave it to reach room temperature. Put this fried mixture in a blender, and make a fine paste. You can add little water to make it finer. Add 2-3 tablespoon oil in a hot wok. Add 1-2 bay leaf, Add a few dry spices along with whole red chilies, Add 3 tablespoon of tomato-onion-garlic paste, Fry for 2 minutes at medium heat, add a tablespoon of Kashmiri red chili powder, a pinch of turmeric, a half tablespoon of coriander powder, red chili powder as per taste, salt as per taste, A pinch of garam masala powder, mix well and cook for 2-3 minutes at low heat, Add the rest of the paste, Mix well. Cover the lid and cook for 5-7 minutes at low flame. Add approx 2 cups of water. Add more as per your choice of gravy. Add stuffed potatoes, Mix well. Cover the lid and cook at low flame until potatoes cook nicely. Let's cut and check potato from inside. Bharwa Dum Aaloo is cooked. Serve hot. Garnish it with coriander leaves.
