Today we're making one of Kayte's favorite holiday recipes, something her mother used to make every Christmas: the forgotten cookie. Crunchy on the outside, soft and gooey on the inside, the forgotten cookie is surprisingly memorable. For more recipes, episodes and stories, visit: http://eartheats.org/ Music: Universal Production Music ©2020 Trustees of Indiana University --- Ingredients: 1 egg white ⅓ cup sugar ½ cup mini sweet chocolate chips, or dark chocolate, finely chopped ½ cup chopped walnuts (pecans are also nice) Directions: Let egg white stand at room temp in the mixing bowl for 30 minutes. Beat on medium speed until soft peaks form. Beat in the sugar gradually, on high until soft peaks form again. Carefully fold in the chocolate and nuts. Drop by rounded teaspoonfuls onto a baking sheet lined with parchment, spacing apart two inches. Bake for 30 minutes or until firm to the touch. Turn off the oven and let the cookies dry in the oven for 1-2 hours. Carefully remove the cookies from the parchment, store in an airtight container.
