Zafrani Chicken Juicy Dum Biryani Recipe | Hyderabadi Style Saffron Chicken Biryani If you love rich, aromatic and juicy biryani, then this Zafrani Chicken Dum Biryani is a must-try! Made with tender chicken, fragrant basmati rice, saffron infused milk and traditional dum cooking method, this biryani is packed with royal flavours and irresistible aroma. Perfect for family dinners, special occasions and weekend feasts. In this recipe, chicken is marinated with yoghurt, spices and herbs to make it soft and juicy. Then layered with half cooked rice, saffron milk and fried onions, and slow cooked on dum to lock in all the flavours. The result is a deliciously moist, flavourful and authentic Hyderabadi style biryani that melts in your mouth. Ingredients: • 1 1/2 kg Chicken • 1 1/2 kg Basmati Rice • 250g cup Curd • 4-5 Onions (fried) • 2 tbsp Ginger Garlic Paste • 4 Green Chillies • Fresh Coriander Leaves • Fresh Mint Leaves • Whole Spices • 1 tsp Turmeric Powder • 2 tsp Red Chilli Powder • 1 tbsp Biryani Masala • Salt as required • 4 tbsp Oil • 2 tbsp Ghee • Saffron strands soaked in warm milk • Lemon Juice Cooking Method: First, marinate the chicken with curd, spices, ginger garlic paste, salt and lemon juice. Let it rest for at least 1 hour. Meanwhile, soak the basmati rice for 30 minutes and cook it till 70% done. Now in a heavy bottom pot, add the marinated chicken and layer it with half cooked rice. Add fried onions, mint, coriander and saffron milk on top. Drizzle some ghee and oil. Seal the lid and cook on dum (low flame) for 25-30 minutes.
