Description : This whole chicken infused with a garlicky, sweet, spicy and smoky pineapple flavor has a distinct Hawaiian influence. It is a healthy alternative to the traditional fried chicken recipe. Ingredients : Whole chicken with skin Pineapple – whole, peeled, and sliced as shown Pineapple juice – ½ ltr Brown sugar – 1 tablespoon Garlic – finely chopped, 1 tablespoon Vinegar – 2 tablespoons Soya sauce – 1 tablespoon Salt – to taste Spring onions – finely chopped, 1 cup Zucchini – diced, 1 cup Mixed bell peppers – diced, 1 cup Broccoli – diced, 1 cup Pineapple – diced, 1 cup Tomato – 1, cut in half Pepper – 1 tablespoon Mayonnaise – 2 tablespoons Procedure : Mix the pineapple juice, brown sugar, garlic, vinegar, soya sauce and salt. Infuse the whole chicken with skin. Mix well, so that the chicken absorbs the juice. Stuff the chicken with the cut spring onions. Place the chicken on the pineapple and fasten with the skewer. Bake in a preheated oven @ 180℃ for 30 minutes. Mix all the veggies in a bowl (zucchini, bell peppers, broccoli and parsley) Add in the pineapple and mayonnaise, while sprinkling some pineapple juice Bake these veggies in a preheated oven @ 180℃ for 15 minutes.
