Presenting authentic Sindhi style Mutton Curry I have also mentioned the recipe below do check it out. Recipe (serves 4-5 ) Ingredients required 1. Onions - 750gm 2. Mutton curry cut - 1kg 3. Bay leaf - 2 no. 4. Red chili powder - 2tsp 5. Turmeric powder - 1tsp 6. Coriander Powder - 2tsp 7. Salt - to taste 8. Garlic - 1/2 cup 9. Ginger - 1.5 inch 10. Green chili - 3-4 no. 11. Cinnamon sticks - 2 no. 12. Green cardamom - 3 no. 13. Black cardamom - 1no. 14. Cloves/Laung - 5 - 6 15. Cumin seeds/jeera - 1tsp 16. Tomato puree - 1cup 17. Oil for cooking 18. Water Method In a pressure cooker add 1 tbsp oil, once heated added the sliced onions and sauté them until translucent. Take mutton and wash it under running water. Once translucent add in the bay leaf and give it a mix. To that add the washed mutton. Its time to add the dry masalas, that is 2 tsp of red chili powder, 1tsp of turmeric powder, coriander powder 2tsp and salt to your taste preference. Close lid and cook until 3 whistles. Its time to prepare the ginger, garlic and green chili paste. In a mixing jar add in the chopped ginger, garlic and green chili and blend it. Check mutton after 3 whistles it should be 85 % to 90 % done. Time to prepare the base for the gravy. Vessel used is Sipdi if that's not available Kadai can used. In that add 2 tbsp oil. Once heated add in the ginger garlic and green chili paste. Mix until browned nicely. Once done add in the boiled mutton and give it a mix. Its time to prepare the garam masala, In a mixer jar add cinnamon, cloves, cumin seeds, peppercorns, green and black cardamom. Blend into powder. As the water starts evaporating and gravy getting thicker, add in the freshly ground garam masala. Give it a nice mix. Next add in the tomato puree. Mix Color will start to change as the gravy is cooking. Add in little water depending on the consistency you want your curry to be. Mix and cook on slow flame for max 30min so that the flavors infuse well in the mutton And there you Authentic Sindhi style Mutton Curry is done and ready, Now you can too make it at your house ' Post in the comment section if you liked the dish.
