Knife Makers Don’t Show This Part… Establishing the Edge

In this episode I'll be demonstrating my process of establishing the secondary bevel or edge to a finished knife before it is sharpened. I will demonstrate two methods of creating an edge including a convex grind. After establishing the edge and creating the burr or wire edge, I will demonstrate how to remove the burr then final sharpening using a ceramic butchers rod and a leather strop.
