Metro offers a reliable and hassle-free service for Qurbani on Eid Metro also offers delivery service along with self pick-up for the final product Metro follow the best practices during the slaughter process and carry out the activities in a clean and hygienic environment, following all requirements of the Islamic Faith Metro make sure that the customers get their orders delivered on time as promised and the schedules are not disturbed #Nihari #MuttonNihari #SooperChef Mutton Nihari Nihari Ingredients: Ingredients for Nihari Masala: Cloves 2 tsp Long Pepper 3 pcs Nutmeg 1/2 pcs Mace 8-10 pcs Star Anise 2 Black Peppercorns 1 tsp White cumin seeds 2 tsp Black Cumin seeds 1 tsp Fennel Seeds 2 tsp Black Cardamom 2 Green Cardamom 10-12 Cinnamon 3 Dry Ginger 15 g Red Chili Powder 4 tbsp Salt 3 tbsp Turmeric 1 tbsp Bay Leaves 3-4 Coriander Seeds 2 tbsp Ingredients for Nihari: Oil 1/2 cup Mutton shank 1 kg Ginger Garlic Paste 2 tbsp Nihari Masala 3-4 tbsp Water 1/2 cup Lukewarm water 8 cups Wheat Flour 3/4 cup Water (for wheat flour) 1 ½ cup Ginger (for garnish) Fried onion (for garnish) Green chilies (for garnish) Green coriander (for garnish) Ingredients for Tarri: Oil 1/2 cup White cumin seeds 2 tsp Red Chili Powder 1 tsp Nihari Masala 1 tbsp Directions for Nihari Masala: 1. In a pulse machine add white cumin seeds, long pepper, black peppercorns, cloves, fennel seeds, coriander seeds, green cardamom, nutmeg, mace, star anise, dry ginger, black cumin seeds, cinnamon stick, black cardamom and grind into fine powder. 2. In a bowl add the prepared powder, salt, red chili powder, turmeric, bay leaves. Mix well. Nihari Masala is prepared. Directions for Nihari Preparation: 3. In a pot heat oil and add mutton shank and cook until color changes. Now add ginger garlic paste and cook for 2 minutes. 4. Now add nihari masala and water. Cook until oil separates. Add lukewarm water and bring it to boil on high flame. 5. Simmer for 2-2.5 hours on low flame or until meat tenders. 6. In a pan roast wheat flour on medium low heat for 1-2 minutes. Transfer it to a bowl, add water and mix well. Wheat flour mixture is ready. 7. Add wheat flour mixture in nihari and cook for 10-15 mins or until gravy thickens. Set aside. Directions for Tarri Preparation: 8. In a pan heat oil and add white cumin seeds, red chili powder, Nihari masala and cook for a minute. Add the prepared tarri into Nihari, garnish it with ginger, green chilies, fried onion, green coriander. Preparation Time: 15 mins Cooking Time: 2 hr 30 mins Servings: 4-5
