Worcestershire sauce (25 ml) Salt to taste 1/2 cup brewed espresso (125 ml)- 4 shots Method: In a saucepan, heat oil and sweat onions until translucent , about 4-5 minutes. Add all remaining ingredients, except espresso and bring to a boil and reduce to low heat. Simmer covered for 30-40 minutes , until bubbly and thickened and flavour has developed. Adjust with water if necessary. Transfer to blender and pulse until completely smooth. Add the espresso , pulse and adjust seasoning. Transfer to clean mason jar and cool down.
