Lamingtons are an Australian classic that consists of a vanilla sponge coated in chocolate icing and coconut. Serving size 9-12 Cooking time 1 hour Ingredients VANILLA SPONGE 300g caster sugar 6 eggs 300g plain flour 150g melted butter 1 1/2 tsp vanilla extract 1 1/2 tsp baking powder CHOCOLATE ICING 75g melted butter 240ml milk 435g icing sugar 70g cocoa powder shredded coconut Method To make the vanilla sponge start mixing the caster sugar and the eggs together until the sugar is dissolved. Add the melted butter, vanilla and baking powder then sift in the plain flour. Mix everything well then place into a square baking pan and place in pre heated oven 170c/338f for 20-25 minutes until golden brown then test middle is cooked by using a skewer and testing for dryness. Allow cake to cool then measure out and cut into equal size cubes about 6cm/2 1/3". To make the icing simply combine all ingredients then mix until a smooth chocolate syrup is achieved. Add some shredded coconut to a bowl , submerge the sponge squares in chocolate then roll in coconut. Refrigerate for 15 mins prior to serving .
