Scalloped Potatoes Recipe; Ingredients; 3–4 lbs Russet potatoes, peeled and thinly sliced ½ lb bacon, chopped 1 large onion, thinly sliced 4 cups shredded cheddar cheese 1 quart (4 cups) half-and-half ¼ lb (1 stick) butter, plus extra for greasing the pan Fresh chives, chopped, for garnish Fresh parsley, chopped Salt and pepper to taste Instructions Preheat grill or oven to 350°F Fry the bacon. Cook the chopped bacon in a pan until it's crispy. Set aside the cooked bacon, but keep some of the rendered bacon fat in the pan. Sauté the onions. Add the sliced onion to the pan with the bacon fat and cook until soft and translucent. Assemble the dish. Grease a 12 inch skillet or pan with butter. Place a layer of the thinly sliced potatoes on the bottom. Build the layers. Season the potatoes with salt and pepper. Sprinkle some of the sautéed onions, chopped parsley, and fresh chives. Then, scatter a handful of the crumbled bacon and a layer of cheese. Repeat the process, Continue layering the potatoes, seasonings, onion, bacon, and cheese until you run out of ingredients, or the pan is full. Save some cheese to top off later on. Add the liquid. Pour the quart of half-and-haIlf evenly over the potato layers being careful to not to overfill, fill to about ½” from top of skillet. . Dot the top with small pats of butter. Cook the potatoes. Cover the pan with aluminum foil and place it on the indirect heat side of the grill. Cook for about 1 hour. Finish cooking. After an hour, remove the foil to allow the cream to thicken. Sprinkle the remaining cheese on top and continue cooking for another 30 minutes, or until the cheese is melted and browned and the potatoes are tender. Chow down...
